Beulah Pronk, 95, of Jackson, Minnesota, passed away peacefully and surrounded by family on Sunday, October 11, 2020. Funeral Services will be held at United Methodist Church in Jackson on Friday, October 16, 2020 with burial at Riverside Cemetery immediately following. In lieu of flowers, please send donations to the United Methodist Church of Jackson.

Beulah Ardayl Pronk was born on September 2, 1925, to Glenn and Ina (Zimmerli) Mix in Jackson, MN. She enjoyed babysitting for multiple families throughout her childhood. In 1943, she graduated from Jackson High School and began work at the Minnesota Egg Plant. There, she met and fell in love with Nick Pronk. They were married in Chesterfield, South Carolina, on December 18, 1943. Nick was then deployed overseas to serve in the U.S. Army during World War II, and Beulah continued working on the home front. When Nick returned home they started their family, eventually raising four boys together. While caring for her family, Beulah held positions at the Egg Plant, the school cafeteria, and finally Sperry Univac before retiring in 1986. Throughout retirement, Beulah continued to spend her time caring for others. She and Nick spent several years in Golden, Colorado, tending to an aunt. Upon returning home to Jackson, they helped out another uncle and aunt in addition to serving their community and enjoying their family. After 66 years of marriage, Nick passed away on June 27, 2010. Beulah stayed in Jackson at the Pines before moving to Shorewood and then Cottagewood Senior Communities in Rochester, MN, where she passed away after a life filled with love and cherished memories.

Beulah was an active member of the United Methodist Church and the longest living member of the VFW Ladies Auxiliary Post #900. Nick was one of the original members of the VFW Racing Association, and Beulah dutifully served food at the races for 28 years. She was an incredible cook, an avid Bingo player, and a vivid storyteller. Beulah’s care and hospitality made her home a warm haven for her family and friends. This was especially true during the holidays, and her traditions of abundant food, classic décor, and bringing people together will live on in her loved ones.

Beulah is survived by her four sons: Douglas (Nina) Pronk of Dewey, AZ, James (Robin) Pronk of Dewey, AZ, David (Pam) Pronk of Jackson, MN, and Curtis (Barbara) Pronk of Rochester, MN; seven grandchildren: Tyler (Christi), Tracey (Matthew), Ryan, Amanda, Nicholas, Phillip, and Dustin; and four great-granddaughters: Sophia, Ellinor, Emily, and Ava.

She was preceded in death by her husband, Nick Pronk; an infant son; her brothers Kenneth, Arthur, Melvin, and Irvin Mix; and her sister, Ruby Thurmer.

Beulah will be lovingly remembered by all who knew her.
