Carol Olsen Obituary

Carol Jane (Bannister) Olsen, 56, of Omaha, Nebraska, entered into eternal rest on Saturday, March 27, 2021 at the University of Nebraska Medical Center in Omaha, Nebraska. A Celebration of Life service will be held at 10:00 a.m. on Friday, April 23, 2021 at Our Savior’s Lutheran Church in Jackson with Pastor Cynthia Hopp officiating. Visitation will take place at the church one hour prior to the Celebration service.

Those attending the service are asked to be mindful in helping to reduce the spread of Covid-19 by wearing masks and practicing social distancing. Those unable to attend the service are encouraged to watch the service livestreamed on the Osterberg Funeral Home Facebook page.

In lieu of flowers, the family requests memorials be made in Carol’s name to the Pacific Whale Foundation in Maui, Hawaii.

 

Carol was born on October 28, 1964 in Jackson, MN to Wayne and Wanda Bannister. She spent her childhood growing up in Jackson with her 2 sisters; Lois and Betty, and 2 brothers; Terry and Gary. Carol received her education at the Jackson schools. Carol was a member of Our Saviors Lutheran Church in Jackson.

On June 10, 1982, Carol met the love of her life and soul mate and was united in marriage to Kevin Olsen on June 17, 1983. After their marriage they resided in Jackson, then relocated to Minneapolis, MN. As a military spouse Carol, lived in Fulda, Germany, Hopkinsville, Kentucky and finally in Clarksville, Tennessee. Carol worked as a cook/waitress and then opened an in-home daycare. After the passing of her parents’, she relocated back to Jackson in 1997. Carol worked at Rural Connection, Jackson Feed, and finally as an Insurance Agent at Complete Insurance Services. After taking a 25th wedding anniversary trip to Maui, Hawaii, she fell in love with the Aloha spirit and made a move to island life. There she worked as a Room Service Coordinator for the Four Seasons Resort and then transitioned to Accounting and Payroll Specialist for the Pacific Whale Foundation. Because of her wanting to be closer to family, she decided to relocate to Omaha, NE.

In her free time, Carol enjoyed being with her family, her grandchildren held a very special place in her heart. She enjoyed traveling, camping, riding Harley motorcycle, and kayaking especially when the whales were around Maui. She also enjoyed crocheting, scrapbooking, and making stained glass art. She loved all holidays; Halloween was her favorite and would go all out on her costumes. She loved to watch Hallmark movies on TV.

Survivors include her husband, Kevin Olsen of Omaha, NE; her children, Tyler Olsen of Jackson, MN; Lindsey (David) Houston of Omaha, NE; Dayton Olsen of Augusta, GA. She is also survived by four grandchildren, Cayden, Gabriel, Savannah, & Hadley, and many other relatives.

Carol was preceded in death by her parents Wayne and Wanda Bannister.
